Natural condition prunes are the form that all
prunes are initially dried to. Typical moisture
levels are 18% using the DFA moisture meter method.
These prunes need to be hydrated before using.
Typical moisture levels for consumption as whole
prunes is 27% or higher.
The
preferred method for re-hydration is steaming
the fruit until it reached the desired moisture

Sizes Information
Natural Condition (N/C) Prunes are sold on a count
per pound basis (number of prunes per pound).
The range of sizes for N/C prunes are from 30-120
count. Stapleton-Spence defines prunes using the
following size nomenclature (final use form):
Extra
Large: 40 count or higher
Large: 41-60 count
Medium: 61-85 count
Small: 85-100 count
N/C Fruit Storage
Shelf
life of 24 months when stored under cool dry conditions.
We recommend indoor storage. Be sure N/C prunes
are covered.
N/C
prunes are microbially stable due to low water
activity. However, N/C prunes do attract pests
and careful measures must be put into place to
protect against insects, birds and rodents.
